Beetroot pachadi

A healthy and flavorful raita made with grated beetroot and coconut masala.

Ingredients:

  • 2 cups grated beetroot
  • ¾ cup water
  • 1 teaspoon salt
  • ½ cup grated coconut
  • 1 teaspoons mustard
  • ½ teaspoon cumin seeds
  • 1 green chili
  • 1-inch piece of ginger
  • ½ cup yogurt (curd), whisked
  • ½ tablespoon coconut oil
  • 2 dried red chilies
  • Curry leaves

Instructions:

  1. Cook the grated beetroot with water and salt until tender.
  2. Grind coconut, green chili, and cumin seeds into a smooth paste.
  3. Add the ground masala to the cooked beetroot and cook for 2 minutes.
  4. Turn off the flame and mix in the well-beaten curd.
  5. Drizzle with coconut oil and garnish with dried red chilies and curry leaves.

 

Serve this refreshing Beetroot Pachadi as a side dish with rice or boiled red rice..
