Beetroot Pachadi Recipe
A healthy and flavorful raita made with grated beetroot and coconut masala.
Ingredients:
- 2 cups grated beetroot
- ¾ cup water
- 1 teaspoon salt
- ½ cup grated coconut
- 1 teaspoons mustard
- ½ teaspoon cumin seeds
- 1 green chili
- 1-inch piece of ginger
- ½ cup yogurt (curd), whisked
- ½ tablespoon coconut oil
- 2 dried red chilies
- Curry leaves
Instructions:
- Cook the grated beetroot with water and salt until tender.
- Grind coconut, green chili, and cumin seeds into a smooth paste.
- Add the ground masala to the cooked beetroot and cook for 2 minutes.
- Turn off the flame and mix in the well-beaten curd.
- Drizzle with coconut oil and garnish with dried red chilies and curry leaves.
